Posted by Melissa on Friday, October 14, 2018 12:16:07 Low Carb Fruit Cupcake Recipe Low Carb Ingredients 2 cups whole wheat pastry flour 2/3 cup sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/8 teaspoon ground cinnamon 1/16 teaspoon ground nutmeg 2 tablespoons almond milk 1/3 teaspoon vanilla extract 1 egg white 2 tablespoons water (to make fruit cupcake batter) 1 cup low carb fruit mix (I used apple, pecan, raspberry and strawberry) 1/6 cup almond milk Instructions Preheat oven to 350°F and line a muffin pan with muffin cups.
In a small bowl, mix together the dry ingredients.
In another bowl, whisk together the almond milk, vanilla and egg white until creamy.
Beat the dry mixture into the wet ingredients until fluffy and smooth.
Add the fruit mix and mix until combined.
Spoon batter into the prepared muffin cupcake liners and bake for about 20 minutes, or until the top is set and a toothpick inserted comes out clean.
Recipe Notes This low carb cake recipe is for a serving size of 1 cup.
To make the fruit cupcakes, divide the batter among two cupcake pans and fill with 1 cup fruit.
